We had another first on our trip to the Oregon coast: huckleberries! Huckleberry bushes in and around the dunes were still laden with juicy berries at the end of November. These coastal berries are pretty tiny (smaller than a blueberry), but pack a punch of flavor. Hard work picking, and even harder to clean, but well worth the effort.
We picked about 4 gallons of berries and made jam in the camper.
Huckleberry Camper Jam
- 4 Cups mashed huckleberries (start with 7)
- 4 Tbsp pectin (4/7 of a bag)
- 2 Tbsp lemon juice
- Bring to a hard boil.
- Add 4 cups of sugar
- Bring to a hard boil for 60 seconds
- Put into clean jam jars
- Boil the jars in boiling water covered by 2 inches for 10 minutes.
